Description
Among the century-old Verdejo vines of El Pago de Saltamontes, a family vineyard dating from before 1863, there is an unusual red grape variety, of unknown genetics, which Javier Sanz has recovered for its originality and which is only found today in his vineyards.
Tasting notes
After reproducing this plant in Javier Sanz’s vineyards, this unique red wine is born, which stands out for its originality and surprises with its personality on the nose and great persistence on the palate. Colorado, made with the Cinderella variety, ages ten months in French and American oak barrels and then continues to age for more than a year in the bottle.
Recommendation and Pairing
Serving temperature: 16- 18 º C.
Ideal for drinking alone, checking its evolution in the glass over time or accompanying spicy dishes, smoked meats and meats.
